What a glorious Sunday we
had yesterday in Edinburg!
Our thermometer registered a
high of 49 degrees, snow was
melting on the streets and
we had a wonderful turnout
for our annual Community
Brunch. What more could we
ask for?
Our local “Community Club”
served between 325 and 350
people brunch yesterday. We
made it as “upscale” as
possible. As in the last 2
years, we had different
“stations” for diners to
visit. The main event is
the initial table with
scrambled eggs, quiche,
hasselback potatoes, bacon
wrapped sausages, bacon and
French toast with syrup. We
also had a mushroom sauce
that people put on their
eggs and/or their
potatoes. We had a bread
table laden with muffins,
scones, caramel rolls and
breads along with cheeses
and smoked salmon. To top
everything off a decadent
dessert bar was provided for
everyone. It was laden with
wonderful cheesecakes, bars,
truffles, pies and many,
many more sweet delights for
everyone. It is wonderful
to see people from all
around the area coming to
our annual brunch
celebration.
Our local Community Club has
about 15 active members. We
work hard to keep Edinburg a
place that people want to
visit. It is so wonderful
to hear when people come to
events such as our Community
Brunch how much they admire
the Edinburg community. We
could not be what we are
without so many people
pitching in to make Edinburg
special. Thanks to everyone
who so willingly helped make
this day a great success.
I want a big shout out to
Taylor Hall for blading the
streets on Saturday. What a
difference it makes to get
some of the ice off the town
streets. TJ Hall was out
there with him opening up
drainage places.
It has been a sad time in
Edinburg as we lost a
special person to the
community. Everett Seim
passed away last week and
his funeral was last Friday.
The memorial service was so
meaningful. People talked
about how Everett had
nicknames for so many. He
called Ellie Stabo “smelly
Ellie”---Ruth Hall “ugly
Christine” and he always
called me “Ma Mielke”. The
tributes were many. Our
thoughts and our prayers are
with Mary and her family –
and thank you Mary for
sharing some of the lovely
flowers from the Memorial
Service for the brunch.
They added a very special
“spring” touch to the event.
Yesterday the Grand Forks
Herald ran a story about
LeRoy Pederson. It was a
great piece. LeRoy has been
a barber for 58 years-----56
of those years have been
spent in Edinburg. LeRoy
has lots of opinions and
loves to share them down at
the lively “Table of
Knowledge”. LeRoy and
Louise are such “pillars” of
the community and are loved
by all.
Irene Seim fell in her
apartment last week and is
now in swing bed at First
Health Care Center in Park
River. Arnold Bjerke had
major surgery in Grand Forks
over a week ago and was in
intensive care for quite a
few days. He had to have
more surgery, but I
understand he is slowly
recovering. Pastor Rebecca,
our pastor at Trinity along
with her husband Pastor
Christopher, just lost her
father to cancer. They are
leaving this Wednesday for
Arizona to attend a memorial
service for him. Our
thoughts and prayers are
with everyone who is going
through difficult times.
Springtime flooding is
predicted for the Red River
Valley. Everyone is hoping
for a slow melt. Today we
are experiencing spring
fog. It is hard to see
across the street. Have a
great day and we will visit
at a later date.
